Molino San Juan (1890) is a living testimony to wheat milling in Ecuador. Its adobe walls, inherited from the “Hacienda Compañía de Jesús” since 1584, evoke centuries of history, faith, and tradition. For more than four centuries, it has been an authentic witness to the country’s cultural and spiritual history.

We interpret heritage by communicating in situ to visitors the legacy of eight generations in an engaging way, creating an intellectual and emotional connection with the meaning of the place.

They are three-course menus that evoke flavors and stories enjoyed by figures such as Saint Mariana of Jesus, Edward Whymper, and the Jesuit priests. Each dish rescues authentic ingredients and historical narratives.
We also prepare personalized traditional menus according to each visitor’s celebration and request, in the first restaurant located inside a mill in Ecuador.
Cozy rooms within what was once a cow milking stable built in 1920. It is a heritage setting where every guest is welcomed as a visitor and farewelled as part of the family.
